Séduit par ce concept, Howard Schultz tente de convaincre ses fondateurs de diversifier les produits proposés et d'envisager l'ouverture d'autres boutiques, sans succès. Qu'à cela ne tienne, la détermination de Howard Schultz le pousse à créer en 1985 sa propre boutique de café baptisée Il Giornale.

Deux ans plus tard, il obtient des créateurs de Starbucks qu'ils lui cèdent la marque pour 3,8 millions de dollars. Une acquisition qui n'a été possible que grâce à la participation financière de William Henry Gates, le père de Bill.

Soucieux de préserver l'âme de Starbucks, Howard Schultz exclut la possibilité de mettre en place des franchises et préfère tout contrôler. Il ouvre des magasins à Chicago et Vancouver. L'intérêt est là, mais on est loi du plébiscite espéré. C'est alors que Howard Schultz décide d'expérimenter le concept en Californie en 1991. Le succès est tel que les ouvertures de magasins se multiplient à une vitesse vertigineuse.

Howard commence à regarder vers l'étranger. Tokyo accueillera le premier Starbucks à l'étranger et sera suivi pas de nombreuses autres implantations en Asie et Océanie. La chaîne attaque également le Moyen-Orient, avec l'ouverture d'enseignes au Liban avant de conquérir le marché européen à travers l'acquisition de 65 cafés de la chaîne Seattle Coffee Company au Royaume-Uni en 1998.

En 2008, Starbucks comptait plus de 13 000 enseignes dont 48 en France.
